Since 2007, Parkway has partnered with Chuy’s to construct over ninety restaurants in nineteen states. The Chuy’s chain was founded in 1982 in Austin, Texas and takes their Tex-Mex made-from-scratch mantra seriously.
Homemade tortillas are rolled out fresh every day, and chickens are roasted daily to create the fixins for Chuy’s “Big As Yo’ Face” burritos and “Chicka-Chicka Boom-Boom” enchiladas (can you tell the company likes to have fun with its menu item names?) And the made-from-scratch daily mantra also extends to the guacamole and the 10 sauces that come with various dishes.
Though Chuy’s takes its food preparation seriously, management likes to have fun with decor per location – each location has a unique look and feel.
